Scotch Eggs recipe wins ‘Eggcellent Breakfast on the Go’ contest

Melanie Braley of Apex won first place in the “Eggcellent Breakfast on the Go” cooking contest at the N.C. State Fair.

Her “On the Go Scotch Eggs” placed first in the contest sponsored by the North Carolina Egg Association. She won $200.

Patrica Lane of Cary earned second place and $150 for her “Easy Egglets on the Go.”

Third place and $100 went to Debbie Deal of Eastover for her breakfast pie.

The entrants had to prepare recipes that included at least one egg per serving. The entries were judged on creativity, taste, ease of preparation and appearance/presentation.

On the Go Scotch Eggs

Ingredients

16 ounces pork sausage

8 hard-boiled eggs

1 large egg

1 cup Italian breadcrumbs

What to Do

Beat one large egg in a bowl. Divide sausage into 8 portions and shape into patties. Place one hard-boiled egg on each patty, shaping the sausage mixture around the egg until completely covered. Dip each sausage-covered egg in raw egg, then roll in breadcrumbs until covered. Place in baking dish and bake in a preheated 350°F oven for 40-45 minutes until golden brown. Eat warm or cold. May be dipped in any of your favorite sauces – cheese, mustard, etc.
